A device for supplying washing and rinsing water of a dish washer in an eating house and a supply method thereof are provided to reduce manufacturing cost, and manufacture a solenoid valve simply by forming a solenoid valve for controlling a rinsing water supply line. A device for supplying washing and rinsing water of a dish washer in an eating house supplies hot water pre-heated at an instant heater(400) through a solenoid valve(300) to a rinsing water tank and a washing water tank to connect the solenoid valve for controlling supply and blockage of hot water by a water level detector with a hot water supply line(410) of the instant heater. The solenoid valve controls a rinsing water supply line for supplying rinsing water to a rinsing water tank(100), and supplies hot water in the instant heater to the rinsing water tank according to the height of water level set in the rinsing water tank. The rinsing water filled in the rinsing water tank is filled with the washing water for a washing water tank by jetting with a rising nozzle(130) at several times.
