Polysaccharides or polysaccharide derivatives (I) are used in building mixes, where (I) are produced by: (a) dissolving or swelling a polysaccharide or polysaccharide derivative in 35-99 wt.% water; (b) stripping off the water with a gas stream in a mill; and (c) separating the solid particles from the gas phase and optionally drying the particles.
