A composition for beer production comprises water, ground malt, yeasts of bottom fermentation, hop extract and holy thistle aqueous solution. A process for beer production comprises mash preparation, mash saccharification, separation of mash from spent grains, mash boiling, fermentation, after fermentation. At the beginning of mash fermentation the holy thistle is added, fruits of which are preliminary ground in mill, wherein spacing between spindles is up to , the grind is mixed with water, heated to the temperature of 70-150 °C and boiled for 45-90 minutes. The concentration of holy thistle fruits is from 1 to 99% from the mash content. The produced beer has original organoleptic characteristics, high biological value. |
