PURPOSE: A producing method of kimchi using sprout vegetables, and the kimchi are provided to use the unsalted sprout vegetables cultivated without using agricultural chemicals for offering health improving functionality. CONSTITUTION: A producing method of kimchi using sprout vegetables comprises the following steps; mixing the sprout vegetables, seafood porridge, and kimchi seasonings to obtain kimchi filling; and mixing the obtained kimchi filling with salted Chinese cabbage. The sprout vegetables are selected from broccoli, bok choy, kale, chicory, celery, parsley, brassica rapa, radish, Chinese cabbage, lettuce, cabbage, beet, leaf mustard, alfalfa, red spinach, and other vegetables. |
