PURPOSE: A producing method of a natural seasoning containing lentinus edodes is provided to spread a solated agar solution on the surface of the lentinus edodes for minimizing the flavor loss amount of the lentinus edodes. CONSTITUTION: A producing method of a natural seasoning containing lentinus edodes comprises the following steps: washing the fresh lentinus edodes with flowing water, and dehydrating; spreading 0.3-1% of agar solution on the dehydrated lentinus edodes; naturally drying the lentinus edodes for 30 minutes-1 hour; hot-air drying the naturally dried lentinus edodes at 100-150 deg C; crushing the dried lentinus edodes into 150-250 meshes; mixing 100 parts of lentinus edodes powder by weight, 300-500 parts of beef powder by weight, 15-35 parts of garlic powder b weight, 10-15 parts of black pepper powder by weight, and 45-65 parts of salt by weight; mixing 100 parts of mixture by weight with 20-30 parts of vegetable juice by weight with enzymes, and aging the mixture for 4-7 days at 4-10 deg C; freeze-drying the aged mixture, and crushing into 150-250 meshes; and sterilizing the obtained seasoning at 100-250 deg C for 5-10 minutes.
