Disclosed is a method for reducing H2S levels in a fermentation medium, the method comprising contacting the fermentation medium with a yeast cell comprising a polynucleotide encoding a MET 10 polypeptide that does not catalyze the conversion of sulfite into sulfide, wherein the amino acid at position 662 of the MET10 polypeptide is Ala, Cys, Asp, Glu, Phe, Gly, His, Ile, Lys, Leu, Met, Asn, Pro, Gin, Arg, Val, Trp or Tyr (SEQ ID NO:5). Also disclosed is an improved yeast cell that does not produce hydrogen sulfide comprising an exogenous polynucleotide encoding a MET 10 polypeptide that does not catalyse the conversion of sulfite to sulfide, wherein the amino acid at position 662 of the MET 10 polypeptide is Ala, Cys, Asp, Glu, Phe, Gly, His, Ile, Lys, Leu, Met, Asn, Pro, Gin, Arg, Val, Tip or Tyr (SEQ ID NO:5), wherein a parent cell of the improved yeast cell produces hydrogen sulfide.
