摘要 PURPOSE: A method for manufacturing beer using bamboo leaves is provided to ensure high antioxidation activity and high polyphenol content and to improve preference. CONSTITUTION: A method for manufacturing beer using bamboo leaves comprises: a step of saccharifying grains for prepare saccharified liquid; a step of fermenting the saccharified liquid by yeast at 10°C-20°C for 3-12 days; and a step of maturing the fermented liquid at 2-6°C. The bamboo leaves are added in 0.1-2.5%(w/v).
