The invention relates to a method for thermally treating, such as baking, cooking, roasting or frying food items (14) and to a device for carrying out said method and to the emitters (13) used in said device which emit selective, transformed infrared radiation (5). The method for selectively irradiating food items (14) to be thermally treated with transformed infrared radiation is characterized in that electromagnetic radiation is generated in a primary emitter (13) by supplying electric energy, chemical energy or thermal energy. An emitter is heated by irradiating the primary emitter with electromagnetic radiation. Irradiation of the food item (14) to be thermally treated is carried out with selective transformed infrared radiation (5) at a wavelength lambda which lies in a wavelength range of from 3.1 mu m to 3.6 mu m or lambda = 2.7 mu m to lambda = 3.1 mu m. The emitters (13) emitting the selective transformed infrared radiation (5) are arranged in a working chamber such as for example a stove and have a carrier material which is linked with a functional ceramic layer (3) to give a high-strength connection. |
