The method according to the invention for producing flour, in particular whole grain flour, from grain, in particular from wheat, comprises a plurality of steps. In a first step, an outer layer of at least one kernel, in particular a grain kernel, is removed, wherein part of the endosperm is also removed. The removed outer layer comprises 5 wt.% to 40 wt.% of the kernel, relative to the kernel before removal, preferably 15 wt.% to 30 wt.%, particularly preferably 18 wt.% to 28 wt.% and most particularly preferably 20 wt.% to 25 wt.%. Said removed parts of the kernel are milled, in particular during removal of the outer layer. The milled, removed outer layer and the kernel are then conveyed into a grinding device and the crushed, removed outer layer and the kernel, in particular the mixture thereof, are then ground in the grinding device to obtain flour, in particular whole grain flour. |
