PURPOSE: A method for isolating tannin from persimmon peel is provided to save cost for tannin production and to resolve environmental problem. CONSTITUTION: A method for isolating edible tannin from waste persimmon peel and persimmon comprises: a step of removing foreign materials from the persimmon peel or persimmon; a step of drying by less than 10% of water content; a step of pulverizing at 1-0.1mm; and a step of adding organic solvent and organic acid to isolate tannin. The organic solvent is ethanol, acetone, butanol, or ethyl acetate. The organic acid is acetic acid, citric acid, ascorbic acid, tartaric acid, or lactic acid.
