Methods provide for preparation of formula components, cutting of girasol-sunflower, its drying in microwave field at specified parameters of process, additional drying by convective method and cryo-grinding in liquid nitrogen to produce flour. Preparation of dough from high-grade wheat flour produced according to specified technology from girasol-sunflower, yolks, salt, soda, vegetable oil, phospholipids and water, its shaping in the form of sheets and baking. One undertakes extraction of basil with liquid nitrogen with separation of according miscella, cutting scorzonera or dandelion roots or oyster plant, its cutting, its drying in microwave field with specified parameters of the process, frying, impregnation with separated miscella with simultaneous increase of pressure, pressure drop down to atmospheric one with simultaneous freezing of raw materials and its cryo-grinding in the medium of released nitrogen to produce flour. One mixes flour with culinary fat, dry milk, sugar substitute "Sladeks" and waffle crumb to make filling, and making waffles of sheets and filling. ^ EFFECT: produced diabetic waffles have improved consistency and coffee taste and flavour with no coffee added to the formula. ^ 3 cl
