The invention relates to an appliance for cooking food under pressure which includes, on the one hand, a pressure-management means (6) designed to control the pressure level prevailing inside the appliance and, on the other hand, a selector (15) that can be moved manually along a predetermined total travel in order to control at least said pressure-management means (6), said appliance being characterised in that the selector (15) is only mechanically connected to the pressure-management means (6) on a first fraction of said predetermined total travel.
