BIOCHEMICAL PRODUCT FOR HYDROLISING POLYSSACHARIDES PRESENT IN SUGAR CANE JUICE

A composition for hydrolysing polyssacharides present in sugar cane juice comprises a combination of the enzymes dextranase (EC 3.2.1.11; EC 3.2.1.61), alpha-amylase (EC 3.2.1.1, EC 3.2.1.98) and amyloglucosidase (EC 3.2.1.3, EC 3.2.1.20) of bacterial or fungal origin, in the following concentration combinations: (a) 30-180g dextranase for 1000L sugar cane juice; 100-600g alpha-amylase for 1000L sugar cane juice, and 400-2100g amyloglucosidase for 1000L sugar cane juice; (b) 86-1000g dextranase for 1000L sugar cane juice; 0g alpha-amylase for 1000L sugar cane juice, and 1031g amyloglucosidase for 1000L sugar cane juice; and (c) 86g dextranase for 1000L sugar cane juice; 580g alpha-amylase for 1000L sugar cane juice, and 1031g amyloglucosidase for 1000L sugar cane juice. The composition is used during the fermentation step in sugar cane processing plants.
