Disclosed is a process for increasing the amount of one or more grain hydrolases in a grain including germinating a grain in conditions in which a physical treatment is applied to a selected organ or tissue of the grain to non-lethally wound the grain, wherein the selected organ or tissue is a rootlet or part thereof, or a shoot, and wherein the wounded rootlet or part thereof, or shoot undergoes repair.
