<P>PROBLEM TO BE SOLVED: To provide an oil-and-fat composition transparency of which is maintained, and which has favorable appearance and improves blooming properties, flavor and palate feeling of coating of deep-fried food to make delicious deep-fried food. <P>SOLUTION: The oil-and-fat composition contains ≥70 mass% of diacylglycerol, sucrose fatty acid ester, and ascorbic acid fatty acid ester: wherein the content of monoester in the sucrose fatty acid ester is ≥30 mass%. <P>COPYRIGHT: (C)2011,JPO&INPIT |
