PROBLEM TO BE SOLVED: To provide a purifying method where tea extract is efficiently and highly clarified. SOLUTION: In the purifying method of the tea extract, the temperature of the tea extract is controlled to 30-100°C; the tea extract is made in contact with minute bubbles having a median diameter of 1-200 μm; and then a bubble layer formed on the surface of a liquid is removed.
