Disclosed is a technique for highly efficiently producing ?-aminobutyric acid (GABA) using waxy barley belonging to the group of naked barley. By using this technique, in particular, GABA waxy barley and GABA waxy barley bran, each containing GABA, and GABA-containing bran supernatant can be mass-produced. The most remarkable characteristics of the aforesaid technique reside in that glutamic acid is converted into GABA due to the action of glutamate decarboxylase contained in the waxy barley so that GABA waxy barley and GABA waxy barley bran, each containing a large amount of GABA, and GABA-containing bran supernatant can be highly efficiently produced by: mixing waxy barley grains, which have been polished with a barley milling device to an extent of 2-20% exclusive, with a glutamic acid solution, which has a concentration of 0.1-3% and a pH value adjusted to 2-9, and soaking the barley grains in the solution at room temperature for 1 hour to overnight (about 15 hours); or, after soaking in the solution similarly for 1 hour to overnight, draining the barley grains and allowing to stand overnight at room temperature. |
