<P>PROBLEM TO BE SOLVED: To provide a pigment preparation of high 13-cis-crocetin content, and a method for producing the pigment preparation. <P>SOLUTION: This pigment preparation includes 13-cis-crocetin, and may comprise all-trans-crocetin or not. In a case of comprising all-trans-crocetin, when a peak area of all-trans-crocetin is 1 upon analysis by HPLC, the peak area of 13-cis-crocetin is ≥1. The method for producing pigment composition of a high 13-cis-crocetin content includes; a step of dissolving a mixture of 13-cis-crocetin and all-trans-crocetin in an alkaline condition to make a mixed solution which contains crocetin; a step of adjusting pH of the crocetin-containing mixed solution to 7.0-8.0 to deposit all-trans-crocetin; and a step of eliminating the deposited all-trans-crocetin to obtain the pigment composition of a high 13-cis-crocetin content. <P>COPYRIGHT: (C)2011,JPO&INPIT |
