A device 1 for pasteurizing a mass of foodstuff includes a feed 4 through which the mass 2 is supplied at pressure and at a predetermined flow rate, a first heater 23 to dielectrically heat the mass of foodstuff, and a second heater 12 to maintain the mass at a constant temperature until discharge for further processing, portioning and packaging. The first heater includes a first tube 5 of an electrically and magnetically inert material suitable for contact with food, and connected to receive the mass of foodstuff from the feed, two plate-like electrodes 6, 7 which are situated on either side of the first tube, have a form corresponding with the external shape of the tube, and which are connected to an RF power generator 8 generating energy at a frequency in the range 10MHz to 50 MHz, and a first jacket 10 filled with a heatable first liquid and extending around the first tube. The second heater 12 is a second tube connected to receive the heated foodstuff from the first tube and in which the hot mass is held at practically constant temperature during the time of residence in the second tube prior to discharge from the second tube. |
