<P>PROBLEM TO BE SOLVED: To provide a method for producing hydrogenated fats and oils, in which production of trans acid is minimized. <P>SOLUTION: The method for producing hydrogenated fats and oils includes a step of performing a hydrogenation reaction on the fats and oils including a polyvalent unsaturated fatty acid in the presence of a nickel catalyst. The temperature of the hydrogenation reaction is 60-75°C. The calorie required to cool a hydrogenation reaction system or/and the amount of the hydrogen to be supplied to the hydrogenation reaction system are adjusted so that the amount of the trans acid to be produced per one unit of the iodine value lessened by the hydrogenation reaction is ≤0.25 wt.%. In order to adjust the calorie or/and the amount of the hydrogen to be supplied, an apparatus for producing hydrogenated fats and oils is made to include: a temperature sensor 9 for detecting the temperature in a reaction vessel 7; a pressure sensor 10 connected to a hydrogen supply line 6; and an electronic controller 11 for sending a control signal on the basis of the temperature information and the pressure information from these sensors so that the operations of a circulation pump 17 and a flow rate control valve 15 are controlled by the electronic controller 11 to adjust the calorie required to cool the hydrogenation reaction system A or/and the amount of the hydrogen to be supplied. <P>COPYRIGHT: (C)2011,JPO&INPIT |
