PURPOSE: A producing method of fermented soybean block containing poly-gamma glutamic acid is provided to improve the taste and the flavor of the fermented soybean block. CONSTITUTION: A producing method of fermented soybean block containing poly-gamma glutamic acid comprises the following steps: soaking soybeans in processing water in a caldron, and heating the soybean with the water; stopping a heating process at 80~100deg C, and settling the soybeans for 1~2hours; inserting a carbon source and brine into the soybeans, and heating to obtain boiled soybeans; injecting microorganism strains generating the poly-gamma glutamic acid into the boiled soybeans, and firstly fermenting the mixture at 35~45deg C for 16~60hours; injecting a fermentation organism strains to the firstly fermented mixture, and grounding before molding a block; and fermenting the fermented soybean block at 25~35deg C for 4~5days. |
