<p><P>PROBLEM TO BE SOLVED: To provide a method for producing a plant material saccharified product which can increase and reinforce an oligosaccharide and a polyphenol of health functional components present in the plant material saccharified product and a brewed product such as table vinegar in the form derived from the raw material. <P>SOLUTION: The plant material saccharified product is obtained by subjecting a plant material to mixed enzyme treatment and can be made in a state where the concentration of at least either of the raw material-derived oligosaccharide and the raw material-derived polyphenol is increased by the enzyme treatment even without undergoing concentration treatment.
