PLANT MATERIAL SACCHARIFIED PRODUCT, BREWED PRODUCT AND METHOD FOR PRODUCING THESE PRODUCTS

PROBLEM TO BE SOLVED: To provide a method for producing a plant material saccharified product which can increase and reinforce an oligosaccharide and a polyphenol of health functional components present in the plant material saccharified product and a brewed product such as table vinegar in the form derived from the raw material.

SOLUTION: The plant material saccharified product is obtained by subjecting a plant material to mixed enzyme treatment and can be made in a state where the concentration of at least either of the raw material-derived oligosaccharide and the raw material-derived polyphenol is increased by the enzyme treatment even without undergoing concentration treatment. As the plant material, squeezed lees of a fruit such as an apple can be used. Further, as the mixed enzyme, cellulase and pectinase are used.
