The present invention relates to extracts of curcuma species plant material using supercritical CO₂ extraction methods, methods of treating a subject suffering from suffering from amyloid plaque aggregation or fibril formation associated with, for example, Alzheimer's disease, and methods of inhibiting amyloid plaque aggregation or fibril formation in tissue thereof.
