摘要 PURPOSE: A fermentation product of schizandrae fructus, a fermentation method thereof, and a food composition containing thereof are provided to improve the content of fructose, glucose, lactic acid, L-tartaric acid, and vitamins. CONSTITUTION: A fermentation method for a fermentation product of schizandrae fructus comprises the following steps: mixing schizandrae fructus with water, and crushing with a homogenizer; heat-sterilizing the crushed schizandrae fructus at 70~75deg C for 5~10minutes; preparing a diluted solution obtained by diluting Enterococcus sp. TO-94 in a saline solution; and mixing the sterilized schizandrae fructus with the diluted solution, and cultivating at 37deg C for 72hours.
