PURPOSE: An aging controlling method of a kimchi storage tank is provided to offer the various kimchi flavors by the taste of users, by controlling the load when setting an aging mode of the kimchi storage tank. CONSTITUTION: An aging controlling method of a kimchi storage tank comprises the following steps: setting the aging temperature of the kimchi storage tank by the kind of kimchi, the aging time, the salinity, and the desired aging degree(S10); determining the upper limit and the lower limit of the aging temperature(S20); determining the controlling temperature by the upper limit and the lower limit of the load applied to the kimchi storage tank(S30,S40); and performing an aging process by the controlling temperature(S50). |
