<P>PROBLEM TO BE SOLVED: To provide an emulsion composition high in emulsion stability even if stored for a long time, showing high transparency when added to a water phase and also sensually excellent and restrained in the decomposition of an oil-soluble component having physiological function such as a capsinoid compound. <P>SOLUTION: The emulsion composition contains an oil phase (A) containing an oil-soluble component and fats and oils, a polyglycerol fatty acid ester (B) and a water phase component (C), and a fatty acid composition of the fats and oils in the oil phase component of (A) is 20-97 capric acid, 28-6,000 lauric acid and 11-2,100 myristic acid to 100 caprylic acid in weight ratio. <P>COPYRIGHT: (C)2011,JPO&INPIT |
