PURPOSE: A producing method of a fruit concentrate is provided to repeat a decompress-concentration process and an atmospheric pressure-concentration process of the fruit concentrate for removing cyanide. CONSTITUTION: A producing method of a fruit concentrate comprises the following steps: preparing the fruit concentrate, and removing pulp from the fruit concentrate; decompress-concentrating the fruit concentrate at 70~75deg C for 100~120minutes at the pressure of 700~740mmHg; atmospheric pressure-concentrating the fruit concentrate at 80~90deg C for 10~20minutes; and repeating the decompress-concentration process and the atmospheric pressure-concentration process until the sweetness of the fruit concentrate is 60~65brix.
