The present invention describes a mechanism for simultaneously moulding and frying precooked and dehydrated maize tortilla, which consists in the combination of: i) a fixed support formed by a rectangular (1) vertical frame, which upper solepiece (2) is fixed to the rest of the frame by means of fastening means (4 and 5), such as screws. This upper solepiece (2) supports, in its central part, a ball bearing or metal guide (3). At the lower central portion of the frame (1), a male part (6) is fixed to the mould that will provide a tortilla shape; and ii) a sliding support with at least a vertical (8) central axis at which lower end portion a female (7) part of the mould is fixed. A method for simultaneously moulding and frying precooked and dehydrated maize tortilla is included, which comprises: i) horizontally locating and fastening a precooked and dehydrated tortilla (14) between the male (6) and female (7) parts of the mould; ii) introducing, by lowering the mould, the tortilla (14) into the oil (12), which has a temperature of from about 200°C to about 250°C, for 5s to 10 s.; iii) pressing the tortilla (14) using the vertical movement of the sliding support, for 15 s to 20 s.; and iv) removing the mould with the tortilla (14) from the oil (12) by raising the mechanism. |
