<p><P>PROBLEM TO BE SOLVED: To set the temperature detected by an infrared sensor to be higher than a set temperature determined by a user, thereby eliminating dangers even when the amount of overshooting increases because of the shape, material and degree of warping of a pan when all kinds of metallic pans, not only an attached tempura pan but also aluminum and copper pans, are used. <P>SOLUTION: This induction heating cooker includes: an infrared sensor 5 which receives an infrared ray radiating from the bottom surface of a cooking container 1 to detect the temperature of the bottom surface of the cooking container 1; and a controller 6 which, if a frying mode is selected by an operation module 7, executes an initial temperature control mode for heating with a predetermined first heating output until the temperature detected by the infrared sensor 5 reaches a first control temperature, and which then enters a stable temperature control mode for controlling the output of an inverter circuit 4 so that the temperature detected is maintained at a second control temperature corresponding to the set temperature.
