摘要 PURPOSE: Fermented soybean paste, soy sauce, and red pepper paste containing a taraxacum coreanum extract, and producing methods thereof are provided to secure the excellent health promotion effect. CONSTITUTION: Producing methods of fermented soybean paste, soy sauce, and red pepper paste containing a taraxacum coreanum extract comprise the following steps: extracting taraxacum coreanum in the pressure of 0.1~0.5kgf/cm2 for 4~6hours inside an extraction tank; mixing 70~90wt% of solution containing the taraxacum coreanum extract and salt, with 10~30wt% of fermented soybean powder, and aging the mixture for producing the fermented soybean paste and soy sauce; and mixing 15~45wt% of saccharified liquid containing the taraxacum coreanum extract, malt, and glutinous rice flour, 30~50wt% of red pepper powder, 10~30wt% of fermented soybean powder, and 5~15wt% of salt to produce the red pepper paste.
