PURPOSE: A whole wheat bread composition and a producing method thereof are provided to secure the nutrition of whole wheat and the soft texture of whole wheat bread. CONSTITUTION: A producing method of a whole wheat bread composition comprises the following steps: washing whole wheat with water(10); soaking the washed whole wheat inside the water(20); pressing the soaked whole wheat to form natural gluten(30); mixing the natural gluten with the water and whole wheat powder(40); adding 500g of water, 10g of yeast, 40g of butter, 70g of sugar, and a sweetener to 1kg of whole wheat powder to obtain whole wheat dough(50); aging the dough at 27~29deg C for 50~70minutes(60); and molding the aged dough(70).
