PURPOSE: Dandelion kimchi and a producing method thereof are provided to offer the dandelion kimchi as new functional food by using the fermentation technique of kimchi. CONSTITUTION: A producing method of dandelion kimchi comprises the following steps collecting leaves and stems of dandelion buds before flowers bloom(S10); washing the collected dandelion leaves and stems for removing foreign materials(S20); inserting the dandelion leaves and stems into 15~25% salt water, and storing and aging for 1year at 3~5deg C(S30); dipping the aged dandelion leaves and stems in water for removing the salinity(S40); and mixing 60~70wt% of dandelion leaves and stems with 30~40wt% of mixed seasoning containing starch syrup, carrot, red pepper powder, fish sauce, sesame seeds, and chives(S50). |
