PURPOSE: A method for manufacturing liquor using swellfish is provided to remove the fishy smell of swellfish by drying cut swellfish and to improve liquor taste and color. CONSTITUTION: A method for manufacturing liquor using swellfish comprises: a step of removing toxic part from swellfish and cutting each part and washing(first process); a step of dipping the cut swellfish in the water for 12-24 hours(second process); a step of drying at indoor for 5-8 days and drying at 23-27°C for 2-5 days(third process); a step of heating swellfish(fourth process); and a step of dipping in the edible alcohol and maturing for 1-3 months(fifth process). |
