摘要 PURPOSE: Instant spicy soft tofu stew for packing, and a producing method thereof are provided to enable a user to easily cook spicy soft tofu stew without preparing sauce and additional ingredients separately. CONSTITUTION: A producing method of instant spicy soft tofu stew for packing comprises the following steps: removing blood from 5kg of pork bones; boiling the pork bones, and removing the water; mixing the pork bones with 10L of water, 1kg of onion, 500g of spring onion, 2kg of Chinese radish, 1kg of dried anchovy, and 500g ginger, and boiling the mixture for 8~10hours; removing oil from the obtained pork bone stock(1) using a sieve; adding 500g of malt and 3kg of flour into 3L of water, and saccharifying and cooling the mixture; adding 3kg of red pepper powder and 50g of salt into the saccharified mixture, and fermenting the mixture to obtain fermented red pepper paste(2); inserting 300ml of pork bone stock, 1g of salt, and 5g of fermented red pepper paste into a sealing container; and inserting soft tofu, oyster, clam flesh, beef, and other ingredients into the container before sealing.
