PURPOSE: A peeling method of kiwi fruit by rapidly freezing the kiwi fruit is provided to effectively peel the kiwi fruit by dipping the rapidly frozen kiwi fruit into warm water. CONSTITUTION: A peeling method of kiwi fruit comprises the following steps: washing the kiwi fruit(S1); rapidly freezing the washed kiwi fruit(S2); dipping the frozen kiwi into 50~60deg C warm water for 3~5seconds(S3); and pressing the dipped kiwi fruit with both hands(S4).
