PROBLEM TO BE SOLVED: To provide a method and an apparatus for cooling/freezing food by and with which food including fish or fish muscle is cooled and frozen to stably shift the food into a supercooled condition. SOLUTION: The method for cooling/freezing food includes: the step of soaking food in sherbet-like ice 1 having a temperature lower than the freezing point of fish muscle-containing food 3 to cool the food so as to be shifted to a supercooled condition; the step of discharging the sherbet-like ice, and also blowing air having a temperature lower than the freezing point of the food to the food to release the food from the supercooled condition and raise the temperature of the food up to the freezing point to partially freeze water in the food to generate ice crystals; and the step of cooling the food to have a temperature of the freezing point or lower and freezing the water in the food using the ice crystals each as a nucleus.
