FIELD: food industry. ^ SUBSTANCE: invention relates to technology of canned compotes manufacturing. The method provides for recipe components preparation, dandelion roots and pomegranate peel cutting and drying in microwave field at preset process parametres, dandelion roots frying and milling, additional drying by conventional method and mincing pomegranate peel, mixing dandelion roots and pomegranate peel at a weight ratio of 7:3, obtained mixture extraction with drinking water at preset process parametres, obtained extract filtering, preparation of syrup based on it, packing of cherries and syrup, sealing and sterilisation. ^ EFFECT: method allows to produce compote with coffee flavour and aroma tones with no coffee content, simplify the technology, reduce content of boiled fruits in the end product, extend the product's storage life. ^ 1 tbl |
