<P>PROBLEM TO BE SOLVED: To provide a fat and oil which has sharp melting properties (meltability in mouth), has satisfactory compatibility with cacao fat, has a low content of trans-fatty acid and can be used as a non-tempered hard butter of non-lauric acid type, and to provide a method of producing the fat and oil. <P>SOLUTION: A soft part is provided by fractionating the fat and oil A which contains a first non-lauric type fat and oil containing 50 to 100 mass% of SUS-type triglyceride and a non-lauric type transesterified oil containing 12 to 38 mass% of SSU-type triglyceride, or the fat and oil B obtained by adding hydrogen to the fat and oil A. <P>COPYRIGHT: (C)2011,JPO&INPIT |
