PROBLEM TO BE SOLVED: To provide a coffee essence from which a coffee drink free from a grain smell and having good flavor while containing chlorogenic acids in a high concentration can be produced, to provide a method for producing the coffee essence, and to provide the coffee drink containing the coffee essence. SOLUTION: The method for producing the coffee essence includes a step of obtaining an extract from cinnamon roast coffee beans, and a step of concentrating the extract at a temperature within the range of 50-90°C.
