PROBLEM TO BE SOLVED: To prevent occurrence of cooking irregularity by evading an excessive pressurization amount from being applied to a cooked rice inside a pot in a start heating step. SOLUTION: The pressure rice cooker includes: a lid body for closing the opening of a pot and a rice cooker body; a pressure valve for adjusting a pressure inside the pot; a pressure valve opening mechanism for controlling the opening of the pressure valve; and a controller for executing a rice cooking step including a water absorption step of controlling heating means and the pressure valve opening mechanism and making the cooked rice inside the pot absorb water, a start heating step of elevating a temperature and performing heating until boiling, and a boiling maintaining step of maintaining a boiling state. The controller starts full power supply to the heating means after the end of the water absorption step I in the start heating step II, operates the pressure valve opening mechanism after the lapse of predetermined delay time t21 from the start of the full power supply, closes the pressure valve to elevate the pressure inside the pot to an atmospheric pressure or higher, executes the start heating step II, shifts to the boiling maintaining step III after the end of the start heating step, and executes the boiling maintaining step.
