PURPOSE: A method for modifying the surface of discolored or contaminated vegetable lamb skin crust is provided to maintain physical property of vegetable lamb skin. CONSTITUTION: A method for modifying the surface of discolored or contaminated vegetable lamb skin crust comprises: a step of mixing vegetable lamb skin crust with EDTA(ethylenediaminetetraacetic acid) to easily separate the contaminated material on the lamb skin crust by binding with EDTA; a step of removing the contaminated material; a step of dyeing the vegetable lamb crust with vegetable tanning agent or natural dye; and a step of removing moisture of the lamb crust.
