PURPOSE: A producing method of fermented mushroom tea is provided to improve the color and the flavor of the fermented mushroom tea by freeze-drying the mushroom tea without burning. CONSTITUTION: A producing method of fermented mushroom tea comprises the following steps: acetic acid fermenting mushrooms, by injecting acetobacter aceti bacteria and batch fermenting for 15~134days at 20~30deg C; removing fermentation liquid and collecting residues; repetitively washing the residues with water; freezing the residues at -45~-35deg C for 0.6~1.3hours, and changing the temperature at -25~-15deg C; heating the residues at -5~5deg C for 15~25hours, 10~20deg C for 3~5hours, and 25~35deg C for 5~7hours; freeze-drying the residues for 70~80hours; and crushing the dried residues.
