PROBLEM TO BE SOLVED: To provide a preservation agent, activity activation agent and deactivation preventing agent for an amidase usable for producingα-amino acids,α-hydroxy acids, etc. SOLUTION: An amidase enzyme solution is prepared by cloning a thermostable amidase gene derived from Thermus sp. 0-3-1 strain belonging to genus Thermus sp. to Escherichia coli JM109 strain, thereby producing the amidase. Amidase activity is stabilized by making at least one kind of substance selected from a group consisting of nickel, cobalt, manganese and their salts coexist with the enzyme solution, and the method is effective for preservation, activity activation and deactivation prevention of the amidase.
