MANUFACTURING METHOD OF APPLE VINEGAR WITH FED-BATCH FERMENTATION

PURPOSE: A method for producing apple vinegar by fed-batch fermentation is provided to obtain vinegar having high acetic acid concentration and to improve vinegar yield. CONSTITUTION: A method for producing apple vinegar by fed-batch fermentation comprises: a step of inoculating alcohol fermentation strain to apple juice for alcohol fermentation; a step of inoculating vinegar starter to the alcohol fermentation for primary acetic acid fermentation for 28-36 hours; and a step of adding 5-10% of primary acetic acid fermentation and 90-95% of alcohol fermentation for secondary acetic acid fermentation for 32-40 hours.
