PURPOSE: A small conductor meat quality grade determining unit and a method thereof using through an image process are provided to increase the reliability about a rating result and contribute to farmhouse income increase according to an objective apparatus. CONSTITUTION: A small conductor picking up device(110) picks up the small conductor. An image data input part(121) inputs the image data from the small conductor. A color correction module(122) corrects a color correction regression equation. An image process module(123) extracts interest region data of the fixed size. A rating module determines the meat quality grade of the small conductor by comparing the stored standard data with the interest region data.
