<P>PROBLEM TO BE SOLVED: To provide a method for producing wheat flour which is prevented from or reduced in generation of specks, and does not spoil the appearance or processing properties of a product. <P>SOLUTION: The method for producing wheat flour comprises a wheat milling process where at least one kind of extract selected from the group consisting of defatted rice bran extract and roasted rice bran extract is added to wheat. Addition of the extract is performed before milling according to one embodiment, and performed in a conditioning process according to another embodiment.
