PURPOSE: A Mugil cephalus-derived epoxide hydrolase having improved mutation is provided to ensure excellent catalyst activity and to maintain advantage of a wild type M. cephalus EH. CONSTITUTION: A Mugil cephalus-derived epoxide hydrolase has an amino acid sequence of sequence number 3 in which 193th amino acid, phenylalanine is substituted with tyrosine by point mutation in a Mugil cephalus-derived epoxide hydrolase of sequence number 1. A gene having nucleic acid sequence encoding epoxide hydrolase of sequence number 3 has a nucleic acid sequence of sequence number 4.
