PROBLEM TO BE SOLVED: To provide a method for readily and efficiently producing polysaccharides having medium- to low-molecular weight, especially to provide a method suitable for the production of the polysaccharides having the medium- to low-molecular weight of about 300-3,000 KDa, and to provide a method for producing the polysaccharides by which the molecular weights of the produced polysaccharides can easily be controlled. SOLUTION: The method for producing the polysaccharides includes decreasing the set value of the pH of a medium at the time point at which 70-95 mass% of the amount of a carbon source in the medium at the start of culture is consumed, and further culturing lactic bacteria. As a result, the method for readily and efficiently producing the polysaccharides having the medium- to low-molecular weight, especially having the molecular weight of about 300-3,000 KDa can be provided.
