The mould, made from a metal, alloy or other material which is able to withstand the cooking temp. has slots (2) in its walls (1) for the insertion of a movable partition (3) which limits precisely the volume of the mould. The mould can be made in two separate sections, and it can have an independent base and lid, which can be identical and interchangeable. The mould bases and partitions can be made so that adjacent ones fix together, enabling the moulds to be used in commercial quantities. According to the shape of the mould, other inserts can be employed to vary its internal volume. USE/ADVANTAGE - Esp. suitable for use with choux pastry, sponge mixture or brioche dough. Allows mould volume to be precisely controlled.
