PROBLEM TO BE SOLVED: To provide a method for preparing a water-soluble hemicellulose at a low cost. SOLUTION: The method includes the following steps (A) to (C): (A)extracting a hemicellulose-containing extract liquid from a raw material derived from hemicellulose-containing plants at 10-40°C with a 0.1-2 N alkaline solvent; (B) regulating the pH of the hemicellulose-containing extract liquid extracted in the step (A) to pH 3-8; and (C) reacting the hemicellulose-containing extract liquid subjected to pH adjustment in the step (B) with at least one hydrolase selected from the group consisting of hemicellulase and cellulase, and thereby providing the water-soluble hemicellulose.
